Make 3-4 deep cuts on each side of the chicken breasts. Season. - Beat the butter until softened and gradually work in the pesto. Spread the skin side of the chicken breast with half the pesto butter. Set aside - Place the vegetables in a roasting dish, season and drizzle with oil, bake in a pre heated the oven to 220C, 425F, Gas Mark 7 for 20-25 minutes . - Meanwhile, preheat the grill to hot. Grill the chicken for about 10 minutes then turn the chicken over. Spread the remaining pesto butter and grill for a further 10 minutes or until cooked through. - Serve the pesto chicken with the roasted vegetables. |
