 Fried fish with garlic and herb crushed new potatoes

 Serves 4 Servings
 Preparation Time 5 Minutes
 Cooking Time 15 Minutes

- 450g (1lb) new potatoes
- salt and freshly ground black pepper
- 120ml (8tbsp) mayonnaise
- 1 clove garlic, crushed
- 60ml (4tbsp) freshly chopped chives
- 4 fish fillets,

- Cook the potatoes in boiling salted water.

- Mix the mayonnaise with the crushed garlic and herbs. Drain the potatoes and lightly crush with a fork and stir in the garlic mayonnaise, season well (save 2-3 tablespoons for serving).

- Meanwhile pan fry the fish until golden.

- Divide the potatoes between four warmed plates place the fish on top. Serve with lemon wedges and freshly cooked green beans.
